Camp Daddy Homemade Pizza

This pizza is so easy and versatile, with a rise time of just 45 minutes, that you will want to add this into your weekly meal rotation. Plus, the sauce is an excellent source of spinach!

It all starts with the pizza dough:

  • 1 ½ cups of warm water (90-105 degrees if you have a thermometer, otherwise try around body temperature. This is the most important step.)

  • 1 tablespoon of sugar

  • 2 teaspoons active yeast

  • 1/2 tsp salt

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon each of your favorite pizza spices (oregano, basil, thyme, etc.)

  • 4 cups flour (plus more for rolling)

Throw it all in a mixer, or a large bowl. You can mix by hand with a sturdy spoon and a couple of strong campers to help. Or put the paddle attachment or dough hook (either will work) on a stand mixer. Mix for about five minutes. Put it aside in a warmish place to rise for 45 minutes.

The sauce:

  • One large jar (about 28 oz) or 2 cans of your favorite pasta sauce, pizza sauce, diced tomatoes, etc

  • 1 Heaping tablespoon of oregano

  • 1 tbsp sugar

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tsp basil

  • 1 tsp thyme

  • 2 cups of fresh baby spinach leaves. 

  • Remember: There's no wrong answer when it comes to pizza sauce. 

A food processor or blender is key if you are trying to sneak spinach into your sauce. Put the sauce ingredients into your food processor until there is no evidence of the dastardly spinach. (The sauce will look more brown than red at this point. You will need a good cover story for your more discriminating campers -- mine believe that homemade sauce ALWAYS turns that color because its so fresh.) 

The cheese:

Chill your grated cheese in the freezer for an hour before you sprinkle it on the pizza. That will give the crust more time to bake before the cheese goes from gooey to brown.

The dough won't rise much, if at all. After 45 minutes, you can roll out your pizza dough. We make 6 to 8 12inch pizzas with thin crust. Brush the crust with olive oil, spoon on a light coating of sauce, the frozen cheese, and any toppings you desire. 

Bake in a 350 degree oven for 9-10 minutes and enjoy!

CAMP DADDY BANANA PANCAKES

Makes 15-20 silver dollar size pancakes

 

  • 1 cup All-purpose Flour

  • 2 tsps baking powder

  • 1/4 tsp salt

  • 1 cup milk

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 tbsp sugar (optional)

  • 1 tbsp oil or melted butter (plus more for the pan)

  • 1-2 ripe bananas (the more over ripe the better!)

 

1. In a medium sized bowl, mix the flour, baking powder, salt, and sugar (the bananas bring their own sweetness so you can skip the sugar if you want) using a whisk or a fork. The dry ingredients are mixed when it looks like it is all flour.

 

2. Whisk in egg, milk, vanilla extract.

 

3. Mash bananas in a separate bowl. Add to mixture and mix.

 

4. Heat a small amount of oil or butter in a frying pan on medium heat. (1-2 minutes)

 

5. Use a measuring cup to pour circles of batter onto the pan.

 

6. Big bubbles will begin to form on your pancakes, about 1-2 minutes. When they begin to pop, it's time to flip. Use a flat spatula to flip pancakes and cook for one more minute.

 

7. Eat pancakes with syrup, compote, or plain!
